On the 13th May millions around the world will be celebrating their love for hummus because it is International Hummus Day!
We stock ready made hummus dips from Delphi or make you own! We sell everything you need: chickpeas (dry and tinned), tahini (dark and light), garlic, lemon juice (fresh and bottled), fresh coriander.
175g/6oz chick-peas, soaked for at least 1 hour, preferably overnight.
4 tablespoons of tahini of your choice. I use a mix of light and dark.
Juice of 2 lemons, or to taste
4 cloves garlic, or to taste, crushed
Sea salt (ground)
2 tablespoons olive oil
Drain and boil the chick-peas in fresh water for about 1 hour or until soft. Put them in a straight sided bowl (a large soufflé dish is ideal) with some of their cooking water and start to mix with a stick hand blender. Add the tahina, lemon juice, garlic and salt, tasting as you go. Mix thoroughly to a light cream. I find the stick blender works much better than a liquidiser, which always seems to get clogged up. Spread on a plate or bowl and sprinkle with olive oil. Garnish with fresh coriander leaves.
